dinner tonight: Gochujang Pork Chop





pork chops

1 pork chop per person
marinade:
2-3 tbsp gochujang
2-3 tbsp soy sauce
fish sauce (just a few dashed)
1-2 inches grated ginger
3-4 grated garlic
1 tbsp brown sugar





napa cabbage green onion pancakes

2-3 leaves per serving - rough chop
a handful of green onions julienned
oil for frying


batter:
1 egg
2/3 cup flour ap
1/3 cup corn flour
1 cup liquid - some type of bullion or broth if not use water


make the batter first and set it aside.

take the cabbage, cut down the center, and then chop it into even strips.

take the green onions and julienne them.

fold the veggies into the batter and make sure all the veggies are thoroughly coated in the batter.

in a cast iron pan, pour neutral oil and heat to a high temp then add in the veggies with the batter and cook till golden brown on each side.


dipping sauce for pancakes

soy sauce
white or rice vinegar
green onions
gochugaru or another chili powder or sauce
touch of water






sesame broccoli

broccoli - 1/2 a head per person
1 teaspoon salt for blanching plus enough water to blanch
1 tablespoon sesame seeds, roasted and crushed (see note)
1 tablespoon sesame oil
1/2 teaspoon minced garlic
salt to taste
