1 1/2 cups dried fruit: dates, cherries, raisins, apricots, cranberries, etc
2 cups oats old fashioned
1 cup dried coconut: the desired shred, I like thick cut
1 cup dried nuts or seeds: a combo of almonds, 2 tbs chia and or flax, pumpkin, sunflower, sesame seeds
1/4-1/2 tsp salt
1/2 cup sweetener: honey, maple, agave
4 tbs melted butter or oleo: melted coconut oil, olive oil, avodao oil
1/4 cup dried sweetener: brown sugar, monk sugar, ?
1 tsp of liquid flavor: vanilla, almond, orange water, rose, etc
or dried herbs/flavor: cinnamon, cardamom, thyme, rosemary
chocolate chips if more sweetness is desired.
- In a separate bowl, mix together the honey, oil and vanilla extract.
- Mix the oats, shredded coconut, walnuts, almonds, pumpkin seeds, chia seeds, cinnamon and salt together in a bowl.
- Add the wet ingredients to the dry ingredients and mix until combined.
- Add the muesli bars to the desired pan and press the bars VERY firmly into the pan!
- Keep pressing until the bars are very packed down.
- Take an extra sheet of parchment paper and place it over the bars while I press down so hands don’t get sticky.
Bake in a 350F oven for approximately 25- 40 minutes, depending on thickness or until the muesli is beginning to turn golden brown.
Remove from the oven and let cool off before placing them into the fridge to chill before cutting into the desired shape.
