dinner tonight: vegetarian noodle bowl - gochujang TVP in a dashi broth with bok choy, steamed broccoli and noodles
GOCHUJANG TVP - textured vegetable protein
to hydrate
1 tvp
1 cup hot broth
1 tsp gochujang
1 tsp soy sauce
saute
1 small onion diced
1 clove garlic
1/2 thumb ginger grated
2-3 green onions diced
1 tsp gochujang
1 tsp brown sugar
oil to saute
place all the hydrating ingredients together and wait a few minutes for the tvp to soak in the liquid.
meanwhile, in a saute pan add oil and then the onion, garlic, and ginger and saute a few minutes before adding in the gochujang, brown sugar, and green onions.
mix well while sauteing then add in the seasoned hydrated tvp.
saute the mixture for around 5 minutes or until the tvp is coated and hot.
DASHI BROTH
1 onion rough chopped
3 white mushrooms rough chopped
1 thumb ginger rough chopped
4 cloves garlic rough chopped
5 cups vegetarian broth - used consomme
1 tbsp white miso
3 dried shitake mushrooms whole
in a sauce pot, saute the onions, mushroom, ginger, and garlic until the onions are caramelizing and brown.
add the broth and scrape the bottom of the pot to get the good bits into the sauce.
add the shitake mushrooms, miso, and soy sauce.
simmer with the lid on for 15 minutes.
option: add kombu seaweed into the broth pot but if you do you need to simmer for 1 hour
BOK CHOY:
2 handfuls per person bok choy sliced in half or quarters
1 clove garlic
oil to saute
few drops sesame oil
salt
bring water to boil in a pot and lightly blanch the bok choy.
strain the bok choy.
in a saute pan add some oil and garlic and lightly saute the garlic for a minute then add in the bok choy and saute for a few minutes.
add the sesame oil to taste ( I just use a few drops) and salt.
ready to serve once heated.
BOWLS
to put it all together, cook your desired noodles.

in bowls large enough to hold the noodles, broth, and toppings, add the noodles and broth, then top with the gochujang tvp, bok choy, and broccoli.
option sprinkle fresh green onions and sesame seeds on top.
