1 1/2 cups ap flour
2 1/2 tsp baking powder
1 tsp salt
1/2 - 1 cup gratedcheese (used Coastal cheddar & Jarlsberg)
1/4 cup chopped chives/or minced green onion
5 TBS butter, cubed and very cold (cube and place in freezer for 10 minutes if it's a warm day)
1/4 cup sour cream or plain yogurt, cold
1/4 cup milk or half and half, cold
in a food processor place the flour, baking powder, and salt then pulse to blend.
add the grated cheese and pulse to reduce the size of the grated cheese.
add the chives/ green onions to the food processor and pulse to reduce the size.
add the cubed butter and pulse a few times to cut the butter to pea size.
try to keep everything short pluses to keep the dough cool.
in a mixing bowl, add the milk & yogurt and stir.
Add the food processor's contents into the mixing bowl and give several folds to combine the wet to dry.
this will be a dry dough, there will be some dry spots but if there is a large amount of dry sprinkle water 1/2 tsp at a time to moisten the super bits.
the first time I made these scones I had around 1/4 cup of dry bits and I sprinkled in a tsp or so a little at a time to the dry bits I pulled aside from the main dough.
used a rolling pin with parchment on top to help roll the dough to 1 to 1 1/2 inch thickness, additionally, I used a bench scrapper to push in the sides and cut the scones into squares and rectangles.
traditionally the scones can be cut with a round biscuit cutter but I don't have one so hand-cut squares were my best choice.
Heat the oven to 375F and bake for 15 minutes, time will change based on thickness and size.
keep an eye on the 15-minute mark and check to see if the scones are baked thru or still doughy then bake a few minutes more, I would work in 5-minute increments and keep checking by opening the scone.
From start to finish I think by the time my oven preheated I had the scone dough made and another 15 minutes to bake so 20-30 minutes.
I served scrambled eggs and sautéed mushrooms with the scones. A surprise for my husband who was out shoveling snow.
