Dinner Tonight: walnut basil ricotta pesto with sautéed zucchini & spinach with ziti

 











PESTO FOR 2 

75 g walnuts

150 g ricotta

25 g basil 

1 clove garlic 

1/2 tsp salt 

10 grates nutmeg 

place all the ingredients into a food processor and blend till smooth. 

read to use in a pasta dish. 


I boiled ziti, and when it was ready I added it to a pan that I sauteed spinach and zucchini that I grated in my large 1/2" grater for a long thin slice but you can cut the zucchini any way you prefer. 

I added the pasta with some of the pasta water to the zucchini & spinach, then i added in the ricotta pesto in spoonfuls until it reached the right consistency - which was all of it. 

topped with pecorino cheese and ready to eat
