dinner tonight: warming sweet potato carrot soup with sesame brittle and tahini creme

 




Sweet potato carrot soup 

2 cups diced carrots - roast 
    500 g sweet potatoes -roast 
    1 tart apple large diced - roast

    tablespoon olive oil
    1 cup diced onion
      1/2  cup finely chopped celery 


        1 1/2 teaspoon ground coriander
          1/2 teaspoon ground turmeric

          1/2 cup red lentil 
          1/4 cup tomato paste 
          2 bay leaves 
            3 cups vegetable stock750ml or if non-veg chicken stock
            pinch of chili flakes or dashes of your favorite hot sauce

                2 tablespoons tahini
                  1 tablespoon lime juiceplus more to taste

                  make the soup

                  Preheat the oven to 400°F.
                  Line a baking sheet with parchment paper and preheat the oven to 400°F..
                  Peel and chop the carrots, sweet potato, and apple into large chunks and bake for 20-25 minutes, or until tender.
                  2 sweet potatoes,2 medium carrots, 1 apple

                  Heat 1 tablespoon oil in a large pan, add the onion, celery, and a pinch of salt, and cook for 5 minutes until soft and the onion is translucent.1 medium onion,2 medium celery, a pinch of salt,1 tablespoon olive oil
                  Add the roasted veggies and the spices and stir in the spices. Cook for another 2-3 minutes.

                  Add the vegetable stock, lentils, tomato paste, chilies or hot sauce, and bay leaves then bring to a boil.

                  Reduce the heat, place the lid on the pan and simmer for 15-20 minutes. 

                  Add the soup, tahini, and lime juice to a blender and blend until smooth. 
                  If the soup is too thick add some water or stock to blend to the consistency you prefer. Salt to taste. 
                  2 tablespoons tahini,1 tablespoon lime juice



                  sesame brittle - oven to 300°F.

                  Mix together all ingredients in a small bowl. Spread out on a baking sheet lined with a non-stick baking sheet or parchment paper and bake for 20 minutes until lightly golden. Leave to cool and then break into shards to serve.
                  ¼ cup sesame seeds,1 tablespoon maple syrup,1 teaspoon soy sauce,½ teaspoon rapeseed or olive oil

                  tahini creme

                  Put all ingredients into a small bowl and whisk to combine.
                  2 tablespoons tahini,1 tablespoon lime juice,1 tablespoon water,1 teaspoon maple syrup
