Elote style Corn balls trials

 Cannellini beans 

Frozen corn 

Zucchini 

Onion

Jalapeño/chilies 

Green onion 

Cilantro 

Egg - or replacer 

Baking powder

Salt


Liquid: alt milk, water, yogurt

Binder: brown rice, bread, farofa, corn meal

Flavoring: 

Lemon

Lime

Coriander 

Cumin

Garlic powder

Onion powder 

Miso

Nutritional yeast

Dry English mustard 



Thoughts on how to make:

Mash the beans lightly to break up then take the veggies and sauté together along with add spices/flavor

Cook lightly let cool. 

Take dry ingredients and sift. 

Beat the eggs. 

Once the veggies are cooked combine with the egg and then add the dry to help bind. If it needs more liquid add small amounts at a time. 

Once the balls mixture is the right consistency place in the fridge to cool off around 30 minutes. 

Take the cooked mix out and form into small balls.

Oven or fry

To fry in a cast iron or other appropriate pan with oil - I seldom deep fry I usually shallow fry and flip 

Oven: try 350f 25-30 minutes but turn over half way and think about 3 minutes of broiling at the end to brown then you if needed
