Gio's Vovó would make a traditional Italian dish Scarola & Fagioli, we've been making it vegetarian and with kale, since we can not easily find escarole - seeds are on the way to grow some this summer.
1 onion, diced
2 garlic cloves, minced
2 ribs celery, diced
1 tsp salt
1 bay leaf
1 tsp oregano
water to cover plus a bit more
1 can cannellini drained
1 tsp bullion
