Vietnamese meatballs pork











MEATBALLS PATTIES 


1 lb ground pork (beef or turkey) 

teaspoons potato starch

1 TB cilantro rough chop

1 1/2 TB garlic or 3-5 cloves

1/4 cup shallots rough chop

green onions chopped 

1 tsp ginger root

1 egg

1 tsp red pepper flakes

1/8 cup sugar

2-3 tsp lemongrass paste  or fresh minced

2 TB fish sauce

2 tsp oyster sauce

in a food processor add the cilantro, garlic, shallots, green onions, ginger root and pulse to reduce to a rough chop. 

Add in the egg, red pepper flakes, sugar, lemon grass paste, fish sauce and oyster sauce and pulse to combine. 

now add in the meat and pulse to combine.

Place into a bowl and chill for 30 minutes or more, then shape, 



For the dipping sauce


1/4 cup lime juice
1 1/2 tablespoons sugar
3/4 cup water
2 1/2 tablespoons fish sauce
1 tablespoon minced garlic
thinly sliced carrots and/or green papaya (optional)

To make the dipping sauce, whisk together lime juice, sugar, water, and fish sauce in a bowl. Adjust to taste. Add garlic, and add thinly sliced carrots and green papaya if using. Set aside.
