Protein Marinade for tofu and or vegan pork
1 lb of tofu or desired vegetarian protien (Omni Pork Strips https://omnifoods.co/us)
6 TB soy sauce or tamari
2-3 tsp sambal or sriracha 3 TB fish sauce or vegetarian fish sauce version
4 tbsp / ¼ cup fresh lime juice
4 tsp brown sugar
1 small garlic clove, finely grated or minced
2 tsp finely grated ginger
1 medium shallot minced
2 tsp toasted sesame oil
* 1 tsp lemon grass optional
Nuoc cham sauce
2 tbsp fish sauce
2 tbsp rice vinegar
1 tsp brown sugar
1/2 cup water or vegetable stock
1/2 tsp grated ginger
1 tsp grated garlic
1 red thai chiili finely chopped or sambal or sriracha
Bun Bowl Ingredients
rice noodles - your choice vermicelli to flat wide noodle, cooking times vary
1- 2 carrots shredded (use one large for 2 portions)
2-4" of shredded daikon radish
* your choice of veggies: greens, cucumber, etc
and herbs: thai basil, cilantro, etc
MAKE PROTEIN:
Start with the protein marinade. Mix your shallots, ginger, garlic, sugar, rice vinegar, and fish sauce and mix well.
Add the pressed cut tofu to marinade for minimum of 30 minutes.
Once ready to cook, heat a cast iron pan to high and add oil. When the pan is hot add in the marinaded protein and cook for a few minutes to heat and caramelized.
NOTE:
When I made this dish I used 1 medium shredded zucchini & half an onion sliced, I sautéed the onions and zucchini and then added in the omni shredded pork. I used a wok to cook the marinated tofu until heated and caramelized.
MAKE Nuoc cham sauce & Do Chau/ marinated carrots and radish salad
For the sauce: take all the ingredients and mix well. Taste and adjust for taste.
Prep the carrots and radish, use a grater to cut the veg into equal length, place into a bowl and pour some of the sauce to marinate at least 30 minutes.
I use this some sauce to marinate the carrot & daikon radish salad.
MAKE NOODLES:
Soak your noodles in hot not boiling water.
Depending on the size of the noodle time will vary.
Thinner noodles can be ready in 2-5 minutes while flat wide noodles may take 10 - 15 minutes to soak. You can prep and hold, add sesame oil to the noodles if you are going to hold them to keep them from sticking together.
Ready to build the bun bowls.
