2 cups rolled oats
1 cup sunflower seeds
1/2 cup flaxseeds
1/3 cup pumpkin seeds
1/4 cup chia seed
1/4 cup hemp seeds
3 TB coconut oil - melted
1 TB honey - or maple syrup
1 tsp dried rosemary
1/2 tsp dried oregano
1 tsp kosher salt
2 cups lukewarm water
Flaked salt to top
In a large bowl, combine all of the dry ingredients and mix to combine.
Next, add the warm water, it seems like too much but it's not.
Mix to combine the water into the dry ingredients.
Cover the bowl with a tea towel or wax cloth and let rest for 30 minutes in the refrigerator.
Preheat the oven to 275º.
Line a baking sheet pan with parchment, take the rested mixture and spread it evenly over the sheet pan. I used a bench scraper and rolling pin to help achieve an even spread and straight lines around - this helps when cutting the bars after baking.
Sprinkle the top of the granola with flake salt
Place into the pre heated oven and bake until the granola bars have completely golden brown and have hardened. It can vary in time, 1:30 to 2 hours.
Once you remove the granola from the oven, move the parchment onto a cutting board and cut the bars in to desired shape 2x3, 2x4 etc.
Cool the bars completely before storing in an air tight container.
