Dinner tonight: quinoa trials











 #1 Morrocan style.

 1 cup dried quinoa (rinse twice, this helps to remove the bitter taste)

2 cups liquid (broth or water)

1/2 onion chopped & sautéed 

3 cloves garlic minced & sautéed 

1 chili pepper - using jalapeño but this can be optional

1 q14 oz can chickpeas rinsed and partial mashed 

1 14 oz can tomatoes or fresh tomatoes

1 TB tomato paste

2 tsp sugar 

Salt to taste (starting with 1 tsp at the beginning with the  

Herbs: mint, parsley, oregano, smoked paprika, cilantro


1 zucchini roasted 

1/4 head of cauliflower roasted 

Olive oil for the roasted veg plus salt to taste 

Options: white potatoes, sweet potatoes, green peas, olives and sautéed Lemons
