Banchan: kale & dikon
1 handful of bagged chopped kale per person
2 inches of dikon radish per person
Parboil in salted water the kale and dikon - cut the dikon in to slices/ disks and then cut in quarters.
Sauce:
in a sauce pan add teaspoon of sesame oil, equal amounts gochujan, oyster sauce, soy sauce, pinch brown sugar, and a splash of water, sesame seeded to coat the veggies. simmer to combine and then take pan off the heat. let it cool down but can still be hot/warm.
Make it:
Add the veggies into the pot with the the sauce in it. stir to coat all the veggies, make sure everything is coated.

Stir Fry:
ingredients:
low smoke oil
1 lb tofu frim or medium frim pressed and cubed (do this hours before)
potato starch, to coat the tofu
1 egg, beaten
3 cloves garlic minced
1/2 onion slices
1 chili pepper - used a jalapeño
ginger root thumb size grated
green onions
sauce:
equal parts soy sauce, oyster sauce, water
brown sugar, salt
combine all the ingredients into a bowl and hold to add to the stir fry pan.
stir fry:
prep the tofu. start this a few hours before cooking time.
press the tofu and when it is done pressing remove from the press and then cut tofu to desired shape.
place the tofu into a bowl that is large enough to toss the tofu. sprinkle potato starch over the tofu and toss to coat, add more starch if needed.
heat a wok or large cast iron pan to high heat.
add a low smoke oil like avocado oil.
once the pan is hot, take the beaten egg and add it to the potato starched tofu and toss the egg thru and then add to the hot pan.
move the tofu in the pan with a rubber or wooden spatula, let the tofu cook for a few minutes on each side.
add more oil to the middle of the pan and add in the onions, garlic, chilies, ginger and sauté to open the fragrance and flavors as well cook the veg.
Toss with the tofu with the veg and then add the sauce into the wok and move the sauce thru the wok.
Add green onions and stir thru.
cook for a few minutes then it's ready to serve.
serve with sushi rice. i use the presser cooker 1:1 for 8 minutes.
