Almond oatmeal cookies with nuts dried fruit and choco chips


DRY

1 cup almond flour 
1 cup oats - I like to give a little chop in the food processor
1/4 -1/2 cup sugar 
1 TB molasses  
1 tsp baking powder

1/4 tsp salt 

WET

1 egg (vegan 2 TB flax in 3 TB water)
1/4 cup oil or butter - i use avocado or olive 

1 tsp vanilla extract

2 TB liquid - cow milk, alt milk or water   


BITS (mix match make it up)

3/4 cup dried fruit - ie raisins, dried cherries, dried blueberries etc

1- 2 cup chopped nuts - ie sliced or chopped almonds, pistachios, pecan, walnuts 


1 cup chocolate chips

1 cup shred coconut 

1/2 cup mini marshmallow cut up  


MAKE 

PREHEAT 350F  


Line a baking sheet with parchment.

(alt method: in a food processor add the almond flour, dried fruit & nuts and pulse to help break them up. then add the oats to break them up and pulse. then add in the wet ingredients and pulse. add more water to make the batter more moist- 1 -2 TB at a time. place into a seperate bowl to help mix without breaking up the nuts and fruit) 


In a bowl combine the dry ingredients and mix combined


In a mixing bowl add the wet ingredients and mix until thoroughly blended.


Add the dry to the wet and mix till it just comes together then fold in the BITS of choice  


If the cookie dough is too thick, add the liquid now to think out.


Shape the cookie dough to bake, take a heaping tablespoon and roll it to a ball and then press down to cookie shape. 



BAKE 

15 minutes or until golden brown on the edges


NOTE

1. The first time I did this recipe i made this recipe I made the cookies too large. this time I am going to weigh out the cookies and see what my preference for grams are. 30 ish grams/ heaping tablespoon


2. i added to half the batch with coconut shred and a few mini marshmellows
