japanese egg salad

 INGREDIENTS 

3 eggs - hard boiled, peeled and diced or mashed with fork

2 TB japanese mayo Kewpie (see mayo recipe below if you don't have kewpie)

1/4 tsp salt 

1 green onion minced 

Bread - japanese milk bread is the original bread to use, i use brioche bread

spreadable butter for the bread


MAKE 

boil the eggs, peel and dice/smash them into equal size pieces. 

mince the green onions. 

add the mayo and salt and green onions into the eggs, mix to combine. 

butter both sides of the bread and then add the eggs mix. enjoy


MAYO FAKE KEWPIE

1 TB sugar 

2 TB rice wine vinegar 

1/2 tsp soy or tamari 

1 cup regular mayo - hellmann's
