1 1/2 cups cottage cheese
1/2 cup greek yogurt
1/3 cup pumpkin puree
2 eggs
4-5 TB monk fruit sweetener (can sub for real sugar)
1/4 tsp pumpkin spices - cinnamon, ginger, cardamom (or to taste)
pinch of salt
place all in a food processor and blend until smooth
pour into a parchment lined baking tin ( i am using 2 min loaf pans)
bake 350ºF 25 - 30 minutes
