Cottage Egg Bites
makes ten large muffin tin size
- 6 large eggs
- 1 1/2 cups cottage cheese
- 1-2 green onions
- 1 TB parsley (can use any herb you like)
- 1- 2 tsp dijon mustard
- 2 tablespoons cornstarch
- 1/4 teaspoon kosher salt
- 1/2- 1 teaspoon hot sauce - i used louisiana hot sauce
- 1 - 1 1/2 cups shredded hard cheese - i used iberico

pre heat oven to 300ºF & have muffin pans sprayed with oil ready to go

In a blender, place the eggs and cottage cheese into the blender and pulse to help combine.
Next add in the green onion, parsley, dijon, cornstarch, salt and hot sauce and blend for 30- 40 seconds to combine. Add in the hard cheese and pulse a few times to combine but not blend smooth.
Pour the batter into the pre sprayed muffin pan (or prepped pan of choice).
I fill the cups half to 3/4 way up. If you wanted to add in a veg or meat this is the time to drop it into the batter in the muffin cups.
Bake 300ºF 20 -25 minutes
check to see if the egg bites are done by shaking the pan, if there's a jiggle in the middle let it bake for more time. Keep an eye out to not over cook.
