Almond oat chocolate nut and dried fruit cookie




DRY: 
1 cup almond flour 
1 cup rolled oats - cracked in the food processor 
1/4 cup cocoa powder (omit if you don't want a chocolate cookie)
1-2 cup nut of choice (pecan, walnuts, cashews, pistachios, almonds, etc)
1 cup dried fruit (raisins, cherries, blueberries, dates, etc) 
1/4-1/2 cup seeds (pumpkink, sunflower, chia, hemp, etc)
1 tsp baking powder 
1/4 tsp kosher salt 

WET

1 egg or flax egg replacement 2 TB flax 4 TB water 
2 TB oil - avocado, olive, vegetable 
1 tsp vanilla (or any other flavor you want) 
1 TB maple syrup 
1/4 cup sugar
1 TB molasses 
**  2-4 TB water (place one TB at a time in the food processor until you get the right consistency - damp not wet and hold its shape) 



350ºF 20 minutes cool completely 

In a food processor, add in the almond flour, nuts, fruits, seeds and pulse to crack the nuts and fruit into smaller pieces. 

Add the remaining ingredients but not the water and pulse to combine but be careful not to make everything into too small pieces. 

Now that the mix is pulsed together check on the moisture levels. 
If you can pack a cookie into shape and it holds the dough should be right but I have needed between 1-4 TB of water to have the dough hold nicely. There needs to be moisture to not have a super crumbly cookie.


NOTES: 
want to increase the protein in these for a meal replacement, add in protein powder of your choice. I have usually had egg white protein powder on hand but pea protein for the vegans out there should work ok
