hot spinach dip with cashew bechamel

 Hot Spinach Dip 

3 TB butter
3 TB flour
½ tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp paprika
2 tsp mustard powder
1 tsp ea onion & garlic powder
1/2 tsp kosher salt
1 1/4 cups milk or alt milk (using cashew) 
1 10- ounce pack frozen spinach thawed and finely chopped or 1.5 lb fresh spinach 

1 1/2 cup feta - 1 brick
pinch of nutmeg
