Pineapple cake 350°F 1 hour
2 large eggs beaten
1 1/2 cup granulated sugar
1 can crushed pineapple with juice 14oz can (about 1 ¾ cups)
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/2 tsp salt
1 1/2 tsp baking powder
Toppings:
1/2 cup shredded sweetened coconut
1/2 cup chopped walnuts

In a large bowl, stir together eggs, sugar, crushed pineapple (with the juices), vanilla

flour, baking powder, and salt.
Add wet to dry and stir to combine.
Pour into baking pan oiled and parchment papered.
Sprinkle walnuts and coconut on top.
Bake 350°F. for 1 hour and 5 minutes or when a toothpick inserted into the center of the cake comes out clean.
Glaze the top of the cake - melted butter, powder sugar vanilla, hot water
