Vanilla-Kissed Ricotta Almond Clouds 

Gluten-Free Soft Ricotta Almond Pillows -
Ingredients:
For the dough: revised
2 1/2 cup almond flour - added another 1 cup to see if they don't flatten out
1/2 cup corn starch - added to see if they don't flatten out
1/2 cup granulated sugar
1/2 cup butter, softened
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 large egg
1/2 teaspoon baking powder
Pinch of salt

For the ricotta filling:
1 cup ricotta cheese
4 tablespoons powdered sugar
2 teaspoons vanilla extract
1 tsp almond extract

For topping:
Sliced almonds
Powdered sugar for dusting

Instructions:
Preheat Oven: Preheat to 350°F (175°C). Line a baking sheet with parchment paper.

Make Dough:
In a bowl, mix 1 cup almond flour, 1/2 cup sugar, 1/2 cup butter, 1/2 almond extract & vanilla, 1 egg, 1/2 tsp baking powder, and pinch salt until a soft dough forms. place in the fridge for 30 minutes

Prepare Filling: In a separate bowl, blend ricotta, powdered sugar, and vanilla until smooth.

Assemble Pillows: Take a spoonful of dough, flatten slightly, add a teaspoon of ricotta filling in the center, then cover with more dough, forming a thick pillow shape.
Add Toppings: Sprinkle sliced almonds on top.
Bake: Bake for 18-20 minutes or until golden.

NOTE:
1st batch - flatten out
2nd batch - chilled the dough and the filing and they still flattened out
3rd batch - going to add 1/2 cup more almond flour plus 1/2 cup corn starch. this worked and i will be correcting the recipe
