whole orange almond cake - served birthday party jan 31 2025



600g oranges - boiled in water whole 

6 eggs

 3 cup almond flour

1 1/4 cup sugar 

2 tsp bp

1/4 tsp salt  

1 tsp vanilla

1/4 tsp almond extract 


MAKE 350ºf 50 minutes

fill a pot with water and the 600g of oranges, i used cuites.
Boil for 30 minutes - but every ten minutes drain the water, refill the water and boil another 10 minutes and repeat one more time to complete the 30 minutes. 
Supposedly the draining and refilling of water helps to remove any bitter taste, is it necessary? not sure but i follow this rule and the cakes are always delicious. 

Let the oranges cool.

Once the oranges are cool place all the ingredients into a blender or food processor and blitz everything together - i like the batter more smooth and i make sure all the pulp is tinny tiny. 

In a pan of choice, i used a bunt pan, oil and parchment paper the pan. 
Pour in the batter and place in a hot oven 350ºF for 50 minutes or until a skewer comes out clean. 

completely cool before removing the pan or serving. 

decorate is desired, i've glazed the cake. i have dusted with powder sugar, I am interested in a yogurt topping or vanilla/pistachio/ your choice ice cream. 

NOTE
this is a dense moist cake, a guest at my birthday party asked if it was cheesecake, all the guesses were not even close. 
another friend likened it to a doughnut! 
I did make an orange lemon glaze which was amazing, not necessary but added yummers. 
But this is dense and moist - I don't know how it could come out dry....
