Peach Spice Cake

Wet Ingredients:

1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1 cup peach purée (blended fresh or canned peaches, drained if needed)

Dry Ingredients:

1 cup (120g) almond flour
2/3 cup (110g) tapioca flour
1/2 cup (45g) oat flour
1/4 cup (20g) brown rice flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 teaspoon cinnamon (slightly reduced since peaches are sweeter than pears)
1/2 teaspoon ginger (to complement the peaches with a bit of warmth)
1/4 teaspoon nutmeg (for depth and coziness)
