roasted tomoates low and slow

 Roasted tomatoes - i use them in sandwiches, bruschetta, salads etc.

1 pint cherry tomatoes

1TB olive oil

3 tsp balsamic vinegar

1 teaspoons sugar

1/4 teaspoon salt (or to taste) 

1 clove garlic - minced

Set oven to 275ºF and roast for 2 hours 

mix all the ingredients together and toss in the tomatoes to coat. 

Roast for 2 hours then let cool and package in a jar with a bit of olive oil on top
